Fish Preservation for common people

Fish being an perishable item needs to be stored in chilled condition. Its not possible to save the freshness of fish to a longer duration. Hence a type of preservation is needed to save the freshness.

The traditional methods of curing and smoking is being outdated because of its unhygeinic conditions prevailed during preservation. The Frozen fish though is simpler and hygeinic, its rather difficult for the common people to relish for a small penny. Moreover the frozen fishes after thawing (melting the solid state to original state of fish) loose or leach the precious nutrients from it. The frozen fishes are hence targeted to export. Now the question is how best it could be preserved with keeping the freshness and its nutritive factors intact.

Canning is an method of preservation of fish for keeping its freshness and intrinsic nutrient characters intact. CIFT- Kochi has provided with very good technoloy where the canned fish are served as Ready to eat or serve products by giving a product as Rice in fish masala packed in tetra packs. Though its costlier, in future days this should emerge as a good food and should come to a level where the common man can relish at a afforded price.
